Oven and griddle cleaning: degreasers for baked-on grease

Carbonised grease on griddles, fryers, grills and ovens needs a powerful alkaline degreaser, applied hot and given time to act. Ten products with their dosage, temperature and limitations exactly as stated on the technical data sheet.

HOW TO CHOOSE

Baked-on grease comes off with heat and alkali

A griddle or oven in daily use builds up grease that heat polymerises and carbonises. Dissolving it takes highly alkaline degreasers (pH 11.5 to 12.8 in this range), almost always applied to the hot surface, at between 50 and 80 °C depending on the product, with a few minutes of contact time and thorough rinsing.

Check the material: according to their data sheets, almost all of these products cannot be used on aluminium. The exception is Neugras, with low alkalinity, which its data sheet allows on all types of metal, including aluminium. Ovens with a self-cleaning system take their own detergent and rinse aid.

Always rinse with plenty of water after the contact time, as the data sheets state. Before applying hot, check the surface temperature: each product has its own range.

Frequently asked questions about oven and griddle cleaning

How do you clean a griddle with baked-on grease?

With an alkaline degreaser applied hot: Deplac or Bilgras, neat or diluted up to 10%, on the griddle at 70–80 °C; leave to act for a few minutes, then rinse with plenty of water.

Which product is used in a self-cleaning oven?

Forclin, which can be sprayed onto the surfaces before running the cleaning programme, or dosed with the oven pump. As a rinse additive, Fordry at 0.3–1 g/l.

Can they be used on aluminium?

Most cannot: their data sheets exclude aluminium. Neugras, with low alkalinity, is the exception: its data sheet allows all types of metal, including aluminium.

How are extractor hood filters cleaned?

By immersion in Filter, dissolved in hot water at 2 to 10% depending on the soiling and the contact time, then rinsing with plenty of water. It is not suitable for aluminium filters.

Do they leave any odour or taste?

The data sheets for Deplac, Bilgras, Hot Gras, Gelgras and Quimigras state that they leave no odours or tastes. Even so, always rinse with plenty of water.

Do you supply restaurants, cleaning companies and distributors?
