Biosecurity in the food industry
Biosecurity in the food industry is defined as the integrated set of preventive measures, procedures and technical protocols intended to prevent, control and eliminate biological hazards—including pathogenic bacteria, viruses, fungi and other contaminating microorganisms—at every stage of the food supply chain, from primary production to the end consumer. These measures cover both environmental control and the hygiene of facilities, equipment and food contact surfaces, guaranteeing the microbiological safety of the finished product in accordance with regulations such as HACCP, ISO 22000 and ISO 22005.
Putting biosecurity into practice in the food industry requires a multidimensional approach. In meat, dairy and beverage processing plants, biosecurity ranges from controlling staff access through changing rooms and disinfection systems to rigorous cleaning and disinfection (CIP) protocols for pipework and equipment.
