Cleaning ovens in professional kitchens and catering requires degreasers capable of removing carbonised and polymerised grease. They differ in the way they work: alkaline products for hot use at 70-80 °C; low-alkalinity products for cold application; a foaming gel sprayed neat, cold or hot; a concentrate diluted at 5-10 %, and a detergent and a rinse aid for equipment with a self-cleaning programme and dosing pump. The choice depends on the grease and the equipment.

Deplac is applied neat or diluted up to 10 % at 70-80 °C; Neugras, low alkalinity, is used cold, neat or up to 10 %; eqo Desengrasante is diluted at 5-10 %; Forclin is sprayed on before the cleaning programme or dosed automatically, and Fordry, a rinse aid, is dosed at 0.3-1 g/l at 45-80 °C.
